Our Orchards

Born at the crossroads of multiple cultures and civilizations, Moroccan olive oil is a reflection of its rich and diverse cultural heritage. Armed with this ancient heritage, our group, farmer and winegrower for over 55 years, has been endeavoring to restore its letters of nobility since 2005.

Located near the gates of the ancient imperial city of Meknes, on the foothills of the Middle Atlas Mountains, THE MAASSERA remains true to the spirit of our country. Its olive oil is the alchemy of assumed modernity, and respect for our ancient traditions. Steeped in the roots of its olive groves, it combines the warmth and energy of its soil, with the quiet strength of its traditions.

Our Know-How

Grown in our own nursery, our olives trees are given special care from planting to harvesting. By carefully selecting our olives at different stages of maturity, (from October to January), by adapting our harvesting methods (manual, or mechanical), to different crop varieties, and by ensuring timely olive crushing, we allow the fruit to fully express its intrinsic rich qualities. Finally, by using advanced technologies in our mills, our olives release all their flavors, therefore giving our oil tremendous olfactory and gustatory qualities.

This total integration provides a high quality olive oil and a perfect traceability of the product. Our orchards of Tala and Namir are certified Eurep Gap (Good Agriculture Practice) and our unit is being certified ISO 22000 and 14 001.

Our varieties

To achieve a great diversity of tastes and aromas, we planted many olive varieties known for their organoleptic properties:

The Picholine: Fruity green, herbaceous aroma with artichoke flavor, strong with peppery return aftertaste.

The Arbequina: Intense fruitiness, with fresh exotic flavor reminiscent of green apple with almond flavor, more spicy than bitter.

The Picual: Fruity green, with high intensity, having herb aromatic connotation, spicy and hot in the mouth with green flavor.

The Koroneiki: Fruity green, rich in flavor.
